For a long time, the only way to get an alcoholic beverage in Utah was to apply for membership and pay a fee to belong to a "private club" for the night. Fortunately, the state's unusual liquor law was repealed last year, and many glasses have since been raised in its memory.
One interesting development is the rise of the brewpub. There are a couple clustered just two blocks from the Sheraton Salt Lake City, including Red Rock Brewing Company and Squatters Pub & Brewery. The breweries have been around for 15 and 20 years, respectively, and they're both very much worth exploring. Skip what's on tap and go for bottles — Utah still limits draught to 3.2% alcohol. Red Rock's Hefeweizen gets high marks both as a drink and as an ingredient in the batter for the fish and chips. it's also a popular brunch destination.
Squatters isn't just good food and beer, it's also an environmental champion and a leader in Utah's Slow Food movement. It's a cozy pub with lots of wood beams and exposed brick — a perfect place for a beer and a bite to eat. As one Yelp reviewer put it, the menu is a bit Cheesecake Factory-esque in its meandering comprehensiveness, but trust your server to steer you to what's good.
